Hericium Americanum or Bear’s Head Tooth is a mushroom that grows in the Pacific Northwest. Like all other types of Hericium, it contains a compound called “erinacines” which is increasingly being studied for it’s neuroprotective effects and has shown potential in treating Alzheimer's disease and dementia.

Hericium Americanum can grow on a number of different kinds of deciduous trees such as beech, maple, birch, oak, walnut and sycamore. Similar to other Hericiums, they grow downward spines that resemble fungal icicles. Edible when young, make sure it is white and cook it before eating. They must be fresh, meaning still growing when picked, otherwise, they become bitter with an unpleasant aftertaste. With it’s pleasant, nutty taste and mild odor, this mushroom just may become your new culinary favorite!

Recognizing Bear's Head Tooth in the Wild
When walking in a temperate forest in the Pacific Northwest of the United States, you'll usually find Bear's Head Tooth mushrooms growing vertically on the bark of deciduous hardwood trees. They grow on live or dead woods, in clusters with spines that are generally 0.4 inches in length or more, and often look like frozen waterfalls.
Preparing Bear's Head Tooth Mushrooms
Unlike other types of mushrooms that are bitter tasting, Bear's Head Tooth has a creamy and somewhat nutty flavor. For a simple recipe, sautee them in butter. You'll have to cook this variety of adult mushrooms longer and on a lower heat than you would other types so that they won't be chewy.
Another way you can prepare this fungus is to prepare a creamy mushroom soup. Try putting them in a crab cake recipe, or put them in beef stroganoff for flavor or as a topping with garlic on fish.
