Grifola frondosa is known as the Maitake mushroom in Japan and hen of the
woods amongst english speakers. It is native to China, Japan and North America
and is prized in traditional Chinese and Japanese medicine as a medicinal
mushroom. It is one of the major culinary mushrooms in Japan and its uses in
cuisine are growing in the west.

Maitake is a polypore mushroom, growing in clusters at the base of trees,
especially oak. It is also perennial and will often grow in the same place for a
number of years. It forms a sclerotium, which is an underground mass of
mycelium from which the fruiting bodies emerge. The fruiting body can grow up
to 100 centimeters consisting of a cluster of grayish-brown caps. The caps are
2-7 centimeters each with wavy margins. As with most polypores, it should be
consumed young as it becomes very tough with age.
