Bear's Head Mushroom (Hericium Abietis)
Hericium Abietis, also known as Bear’s Head, grows east of the Rocky
mountains in North America. It contains compounds called “erinacines” and
“hericenones”, which are increasingly being studied for their neuroprotective
effects and have shown potential in treating Alzheimer's disease and dementia.
Rich in vitamin D, high in fiber and roughly 20 percent protein, this mushroom is
a fungal powerhouse that you want to stock your cabinets with!

Bear’s head mushrooms have a distinct look from other mushrooms. With their
white, soft spines that droop downward from a thick, branched fruiting body, they
look like fungal icicles. They have a meaty and tender texture with a pleasant
seafood-like taste and should be cooked before eating.
