Golden Brown Beech (Hypsizygus tessellatus)

Hypsizygus tessellatus, more commonly known as Golden Brown Beech, is
native to East Asia. However, it is now being cultivated in Europe, North America
and Australia. It has been found to have strong anti-cancer properties and is
highly prized in Japan. More studies are being conducted to discover all of its
Golden Brown Beech grows on Beech trees, hence the name. The fruiting body
is fairly small, has brown caps and white stems. The base of the stem is inedible
and should be cut off in preparation. It must be cooked before eating to make the
nutrients bioavailable. It also has it has a very bitter taste raw but when cooked
has a pleasant, nutty flavor with a firm, slightly crunchy texture. It can be grown
on a hardwood substrate such as poplar, oak, beech, alder, maple, aspen,willow,
elm amongst others. It can be grown on wood logs, in a mushroom bed or a a
mycelium bag. The fruiting temperature ranges from 55 to 65 degrees
