Blue Brat Oyster (Pleurotus ostreatus)
Pleurotus ostreatus or the Blue Brat Oyster mushroom grows in the forests of
sub-tropical and temperate climates. It is responsible for decomposing deciduous
trees, particularly the Beech tree. Interestingly, it is also carnivorous, consuming
the nematode which is itself parasitic This makes for a healthy way to control the
pest without using chemicals. Pleurotus ostreatus has been shown to have
statins and lovastatins that help in lowering cholesterol in the body, as well as
having antibacterial properties.*

Blue Brat Oysters grow in clusters and take on a shelf like shape. Its taste is mild
and its odor is similar to anise. It has as long and thick stem with a small cap that
is deep blue, turning grey as it ages. Like many mushrooms, it should be picked
young for consumption as it becomes tougher as it ages and its taste and smell
deteriorate. It requires a lot of fresh air exchange in order to grow but is generally
fairly easy to grow. Known to devour almost anything, it can even be grown on
coffee grounds, waste paper, sugar cane, grass amongst many other things.
