Lentinula edodes, more commonly known as the shiitake mushroom is native to
East Asia. It is now widely cultivated and consumed in many Asian countries and
has become the second most cultivated mushroom worldwide. It is rich in
proteins, potassium, niacin, calcium, magnesium, phosphorus and B vitamins. In
some forms of traditional medicine, it is considered a medicinal mushrooms and
many medicinal benefits have been researched and observed.

Shiitake grows in cluster on the decaying wood of deciduous trees, such as shii,
chestnut, oak, maple, beech and others. It begins with a dark brown to black cap
that becomes lighter and more convex as it ages. The stem is light brown with a
smooth texture. It likes warm temperatures and lots of humidity. It is a great
mushroom to grow as once a log is producing, it will often fruit for years!
This particular strain of shiitake will grow optimally in temperatures ranging from
40 to 60 degrees Fahrenheit.
This particular strain of shiitake is vigorous and very tolerant. It can be grown
using logs, stumps or sawdust.
