Agaricus bitorquis, also known as the sidewalk mushroom, occurs naturally
throughout North America, Europe and Australia. It gets its name from the habitat
in which it commonly grows which is on sidewalks, gardens, or other disturbed
soils. In fact, it can sometimes even push through asphalt. It is in the same
family as the common button mushrooms and shares many similarities. However,
some mushroom cultivators have found a few characteristics of this mushroom
that have piqued their interests. For instance, Agaricus bitorquis is more resistant
to various viral diseases, grows at higher temperatures and in higher CO2
concentrations as well as more resistance to bruising. It is highly nutritious,
containing 18 amino acids, including all of the essential ones, high in protein,
vitamin B and vitamin C.
The sidewalk mushroom grows in groups or solitarily. Its cap measures 4 to 15
cm in diameter, is smooth and white, staining yellow as it ages. It is convex or flat
with a white stem measuring 3 to 11 cm long and white. It has a firm texture with
a pleasant, mushroomy taste. It can be grown using moist compost and kept in
higher temperatures.
The termite mushroom has a symbiotic relationship with a subfamily of termites,
macrotermitinae, who feed on the fungus. In turn, the mushroom grows from the
termitaria which is the nest that the termites build.
