Trametes versicolor, more commonly known as turkey tail, is native to North
America, Europe and Asia. It has been brewed for thousands of years as a
medicinal tea in chinese medicine. With modern research, it has been found to
contain polysaccharide-K, which has been shown to boost the immune system,
helping to fight off cancer and other infections. It is incredibly nutritious,
containing proteins, minerals and vitamins B and D.

Turkey tail grows on dead and decaying hardwood logs and stumps.
Occasionally, it will grow on conifer wood as well. It is characterised by a cap that
has concentric zones of different colors, resembling a turkey’s tail, hence the
nickname. It can range from rust-brown to dark brown, sometimes even black.
The cap is flat, often triangular or round. To consume, it can be made into
tinctures or teas. It can be grown using logs and stumps or in bags. The ideal
fruiting temperature is between 65 and 75 degrees Fahrenheit.
