How to Identify Oyster Mushrooms

A true oyster mushroom has a few consistent features. The cap is fan-, oyster-, or shell-shaped and grows in overlapping shelves, usually straight from dead hardwood with little or no stem. The gills are white to cream and run down onto whatever stem there is — a trait called decurrent gills. Crucially, the spore print is white to pale lilac-grey. Wild caps are white, grey, or tan; the bright pink, gold, and blue oysters are cultivated color forms rather than colors you will find in a temperate forest.

Are Oyster Mushrooms Safe to Eat? Toxic Lookalikes

True Pleurotus oysters are choice edibles, but a handful of lookalikes can catch out foragers, so identification matters. The most important is the jack-o'-lantern (Omphalotus) group. These grow in dense clusters on wood like oysters and have decurrent gills, but they are a vivid pumpkin-orange, glow faintly green in the dark, and contain illudin toxins that cause severe stomach illness.
