Most vendors sell one shiitake strain, maybe two if they are thorough. We carry the full genus including three species that almost nobody else has in their catalog. The Australian, New Zealand, and South American Lentinula species are genuine rarities in the cultivation market, distinct from edodes in genetics, substrate preferences, and flavor. Shiitake Warm Weather 55-85°F (Lentinula edodes) Liquid Culture

The warm-range shiitake strain that covers the widest temperature window we offer, 55 to 85°F covers most indoor cultivation spaces without climate control. Standard substrate is supplemented hardwood sawdust or masters mix. Cold shocking the colonized block initiates pinning. This is the strain we recommend for most cultivators starting with shiitake and the one we have sold more of than any other Lentinula in our catalog.

Shiitake Cold Weather 40-60°F (Lentinula edodes) Liquid Culture

The cold-weather shiitake strain selected for performance in cool growing environments, basements, outbuildings, and unheated spaces in autumn and winter. At 40 to 60°F fruiting it fills a temperature window that the warm-weather strain finds challenging. Incubation still runs warmer, but fruiting happens reliably at temperatures where other strains stall. We have had customers successfully fruit this strain in barely-heated spaces through northern winters.

Australian Shiitake (Lentinula lateritia) Liquid Culture

Lentinula lateritia is the Australian shiitake relative, a distinct species from edodes that grows on native eucalyptus and other hardwoods in Australian forests. The flavor profile is similar to shiitake but not identical, with slightly more earthiness. It has attracted interest from researchers studying Lentinula genetics and from cultivators who want access to the full genus. Lentinula novae-zelandiae is the New Zealand shiitake, another distinct Southern Hemisphere species confirmed separate from edodes by molecular work.
